Goat Milk Pudding

With an abundance of fresh goat milk, I am always looking for new, fun and tasty ways to use it, not use it up (as my hubby says) but to enjoy it. Our Nigerian Dwarf goat milk is rich and creamy, full of essential nutrients, easier to digest than cow’s milk, naturally homogenized and readily available on the farm. If you have a dairy sensitivity, you may find that goat milk is easier to digest and is worth a try.

This recipe uses fresh goat milk, our free range, organic duck eggs (which are extra rich and perfect for baking), local honey and a few pantry items. It’s a quick and easy recipe, perfect for any day that you’d like to treat yourself.

Ingredients:

Fresh Goat Milk
  • 4 cups fresh Nigerian Dwarf goat milk

  • 1/2 cup maple syrup or honey

  • 1/4 cup cornstarch

  • 3 duck eggs

  • dash of salt

  • 1/2 tsp vanilla or vanilla beans

Fresh Duck Eggs

Combine all of the ingredients in a mixing bowl and blend 15-30 seconds until combined. Pour the pudding mixture into a medium pot over medium heat. Stir with a wisk until the mixture begins to bubble and thicken. Once it’s nice and thick, pour the pudding into serving bowls and cool in the refrigerator.

Be sure to scrape the edges of the pot for any leftover pudding and enjoy!!
